Quick Tomato Bruschetta

Summer is winding down and I have been cooking and eating and enjoying myself but have had little time for blogging! Travels and kids and chaos have kept me from my computer but not from the kitchen. Here is a tomato recipe that is too quick and easy not to share. If you are like me –  you might have an abundance of tomatoes in your kitchen. My CSA (community sponsored agriculture) has delivered loads of tomatoes and basil in the past few weeks. This bruschetta can be tapered to meet picky eaters by omitting the tomato and serving just bread and cheese – yum! This is a fresh easy snack or appetizer to serve up for your family or a crowd.

Quick Tomato Bruschetta

1 loaf fresh rustic bread
2 tomatoes, sliced into 1/2 inch thick pieces
1 ball of fresh mozzarella, sliced into 1/2 inch thick pieces
handful of basil leaves, torn into bite size pieces
balsamic vinegar glaze (optional) (You can find this next to the oil and vinegar in most grocery stores)
salt and pepper to taste

1. Slice bread and brush with high quality olive oil. Place in broiler until the bread is just slightly browned an toasted. Cut into pieces that can be picked up easily.

2. Layer bread with tomato and mozzarella. Sprinkle with salt and pepper. Add basil and drizzle balsamic vinegar glaze or balsamic vinegar on top.

3. Serve and enjoy! See, I told you it was quick!
