Pizza in a Pinch

I was glancing through Jessica Seinfeld’s Double Delicious trying to figure out a dinner plan. I liked the idea of her pizza- we make a lot of pizza at our house – but I adapted her tomato sauce with pureed carrots to use as my sauce. I incorporated a few other items in my freezer/ fridge and it was a huge hit! All the kids asked for more! Much of this recipe can be adapted as to what you have in your fridge.  A whole wheat pita is a great substitute when you don’t have pizza crust.


2 whole wheat pita pockets, or any other pizza crust
1 cup shredded mozzarella
¼ cup parmesan cheese
¼  cup of tomato sauce
2 tbsp ground flax seed
olive oil

  1. Preheat oven to 425
  2. Drizzle oil over the pitas/ crust. Sprinkle with flax seed and use a pinch of salt.
  3. Spread 2 tbsp tomato sauce onto the pitas
  4. Add mozzarella and parmesan
  5. Bake for 10 minutes or until edges are brown and cheese is bubbling.


Serving Suggestions:

Serve with a romaine lettuce salad with oil and vinegar, perpponcinos, black olives and pepperoni

BBQ Chicken, BBQ Sauce, Mozzarella, Red Onion
Pesto, Goat Cheese, Spinach
For the crust- you can use any type of crust available – Trader Joes makes a great whole wheat crust. You can also use boboli or any other premade crust. The best part about the whole wheat is that the kids are getting the whole grain.

Additional toppings: chicken, pepperoni, a layer of spinach are all great additions!
